What is your favourite food to eat?
I love sushi.
Why did you choose to become a Chef?
Food chose me.
An accomplishment that you are most proud of in your career?
Built from scratch, Café Thulp is now a chain of six restaurants.
What staple ingredients are a must in your pantry?
A Fridge full of homemade cured meats and cheese. My favourites are Stilton cheese and Parma ham.
What is the most Indian thing about your eating habits?
Being a Malayali, I’d say my love for fish curry and rice. A feel-good meal!
A memorable cooking experience?
Seafood, I cooked up on beaches of the Phu Quoc Island in Vietnam.
Where do you like to eat?
I’m loving the delicious and spicy Pandi curry at the Coorg Food Company, Kammanhalli. The pork is dried and shredded, tossed in onion, lime and green chillies. Its special!
Describe a meal at your restaurant in one word?
Your favourite thing on the menu?
We do a good burger! I’d recommend The Moo Burger, which is beef and cheese – simple, wholesome and very Thulp.
Your favourite kind of eggs?
A toss up between sunny side up and scrambled eggs.
One culinary trend you wish would disappear?
The Indian Contemporary Fusion Theme.
A good selection of beer on tap or Scotch Whiskey.
A bar you frequent?
One Night In Bangkok or The Humming Tree for its gigs.
A Chef you admire or cooking style you love?
Fergus Henderson has a restaurant in London called St. Johns, and is well known for his philosophy of nose to tail eating, with tried and tested recipes that work.
Best thing about being a chef?
People enjoying the food I cook. Priceless!
Your favourite cookbook?
The Whole Beast: Nose to Tail Eating by Fergus Henderson. This teaches you how to use every part of the animal.
Tea or coffee?
Guangzhou green tea or a smoked green tea from Coonoor, I have been drinking for years, sourced from a small shop close by.

Do you have kitchen superstitions or pet peeves?
A hardcore militant atheist, I don’t believe in superstitions.
How would your friends describe you?
Friendly, warm and impatient.
Something that nobody knows about the Restaurant?
Café Thulp was born from the catchphrase, just THULP THE IDEA!
What are you looking forward to?
After two years of R&D for a range of signature products, my new restaurant opens in March.
Hint: It will have something to do with smoking, curing and meat loving.
