I can’t remember precisely when exactly it happened, but sometime into my first experience of inhaling a Brik Oven ‘shrooms pizza at a friend’s birthday party on a rainy summer night, I turned to a friend and mumbled, mouth half-full and only half-intelligible, something like: “So, this is what pizza tastes like in heaven?” Possibly, it was after the first hit of wild mushroom and goat cheese so fresh that the flavours literally burst into song on your tongue.
Or maybe it was the mind-bending tomato sauce, which in the hands of Brik Oven’s precocious still-in-his-twenties chef, Anirudh Nopany, assumes a life of its own. The secret to any fantastic pizza is its sauce. That, and a great crust. But with a great sauce, you can turn even a mediocre crust into a great pizza. One bite in and you know that Brik Oven has got it right on both counts. The sauce has clearly been coaxed from grade-A tomatoes that were plump, ripe, lovingly nurtured, and just begging to be transformed, as opposed to the generic crap that comes from a bottle. A custom-made wood-fired oven sits pretty in the pint-sized pizzeria and proudly churns out crusts that would make an Italian weep with joy.
The menu is deceptively modest but mad clever – the chefpreneurs have restricted their offerings to pizzas and shakes, with a few sundaes and waffles thrown in for good measure. It’s rare to come across a restaurant menu in Bangalore that doesn’t have 16 pages featuring at least 5 cuisines, whether or not each or any of them gets its due. Not so in the case of Brik Oven – they know their strengths and play to them beautifully.
Of course, this comes with its own set of pitfalls. The main one being the long lines snaking down Church Street waiting for a table to free up. My advice? Get there on a Monday or Tuesday no later than 7.30 PM. Also, your chances of scoring a table are higher if it’s just two of you.
It’s only fair to warn you that their pizza is like crack. One bite and you’re a goner. Eat at your own peril.
