The egg is the Superman of the culinary universe I’m not eggsaggerating. I’ve lost count of how many times has this versatile meal option come to my rescue. It was after sampling a few eggetarian dishes at eateries around Mumbai that I realised that my favourite go-to meal had so many facets to it. If you still harbour the misconception that a sunny side up or quickly beaten omelette is the best eggs can be, here are some yummy egg dishes to make you change your mind. 6. Spanish Omelette – Salt Water Café
Eggs are a nutritional powerhouse. Salt Water Café’s Spanish omelette adds to this goodness with plenty of fresh vegetables. Not only is this a healthful dish, you won’t have to order much else, it’s a meal in itself. The Assorted Greens Omelette also gets my vote.
5. Kejriwal Toast – The Bombay Canteen
This one, I’d go on a dharna for. Served with melt-in-your-mouth brioche bread, the Kejriwal Toast is a speciality at The Bombay Canteen. It is recommended not just for the perfectly fried egg and cheese but also for the utterly awesome green chilli chutney.
4. Eggs Florentine – Indigo Delicatessen
Indigo Delicatessen takes its liberties with elite flourishes, but in the case of its Eggs Florentine, the flourishes are well received. Get a taste of the very best poached eggs in Mumbai set on top of a bed of toasted bread and creamed spinach! Egg fans will also love the Eggs Benedict, a preparation of poached eggs and Hollandaise sauce, which is a winner all the way.

A shout out to Suzette for showing us mortals that crepes need not only be used for sweet desserts. The Complete Crepe is an open-faced crepe of great deliciousness packed with Emmental cheese, ham, and a sunny side-up egg that would put Masterchef to shame. Suzette also serves a delectable Oeufs En Cocotte—the best runny eggs you could have.
2. Greek Salad Omelette – The Nutcracker
This sweet little café is an eggetarian’s dream. There are so many eggy dishes to choose from that you will be spoilt for choice. The Three Cheese Omelette (take your pick from flat, fluffy, or rolled), Kejriwal egg mushroom, the Parsi-favourite Salli Eeda, the Fried Eggs with green chutney—any of these dishes would have guaranteed The Nutcracker a place on this list. The Greek Salad Omelette is another beauty with onion, olives, tomatoes, and delicious feta.
1. Truffled Scrambled Eggs Toast – The Table
This one doesn’t come cheap (Rs. 875 a pop), however, it is so worth it. Creamy scrambled eggs made French-style, toasted sourdough, chives, and wonderful truffles make it a King’s meal. Some of the other eggy wonders on the menu are Baked Eggs and the Spinach and Gruyere Omelette.
